At this time of year, with fresh local produce available, my favorite easy, healthy, and delicious recipe is cherry tomatoes and spiralized zucchini lightly sautéed in olive oil with a dollop or two of pesto stirred in at the last minute.

Cheese Cracker Chicken Fingers
The all-time favorite dinner at our house is chicken (usually leftover from a roast) in cream sauce over rice. It’s also a good way to use up whatever veggies are around, too. So good, but never the same twice!
