Malcolm, I’d have to say part of your recipe is faulty. I live down south and prep chicken for a Popeyes franchise. The chicken only marinates in the seasoning whether it is spicy 0r mild. I would mix my buttermilk with the eggs and dip the chicken in that mixture before flouring the chicken to fry. Try it and let me know how it works out.
