Wow, this is incredibly simple, and I bet it is delicious. I’m going to remove some of the seeds/juice as I just keep picturing the mayo and tomato juices separating in some weird way, although your photo looks like that wasn’t a problem. My brown thumb finally managed to grow a bit of fresh basil, so it’s going in!

I would order this at restaurants down here more often, if I knew I would get that! Sadly, huevos rancheros I have had here were a watery mixture of salsa and eggs scrambled together, with a tablespoon of beans on the side with a lonely tortilla chip sticking out of it.
