Pumpkin Chocolate Chip Pancakes

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1 cup mini chocolate chips
  • ½ teaspoon cloves
  • 1¼ cups pumpkin puree
  • ⅓ cup brown sugar
  • 1 egg
  • 3 tablespoons vegetable oil
  • 1½ cups whole milk
  • 1 teaspoon vanilla extract
  • Butter, maple syrup, and whipped cream, to serve
Method
  1. In a large mixing bowl whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Stir in chocolate chips.
  2. In the bowl of a stand mixer fitted with the whisk attachment, combine pumpkin puree, brown sugar, egg, oil, milk, and vanilla.
  3. Stir wet ingredients into dry until just combined.
  4. Pour or ladle batter – it will be thick – onto a buttered griddle or skillet. Cook 2-3 minutes per side, flipping once. Serve with butter, syrup, and whipped cream.
